You can make yourself a personal-sized cookie. No, for real.
I was inspired by this recipe here that used regular instant oatmeal.
My exact recipe:
1 packet Quaker Steel Cut 3-Minute Oatmeal, Brown Sugar and Cinnamon flavor
1 TBP margarine, melted
2 TSP sugar
2 1/2 TSP applesauce
3 1/2 TBSP flour
Mix it up. I let the dough rest for a bit so that the oats could absorb some of the liquid ingredients.
Form it into a patty about 1/2 inch thick, and bake at 350 until firm. Bingo...a cookie that can be a healthy snack or even a breakfast on the go. This recipe lends itself to much variation as well...banana instead of applesauce, add raisins or other dried fruit, etc. It has a nice chewy texture and a real cinnamony cookie flavor, and the grains bake in smoothly, without grit.
However you use it, you won't be sorry...this oatmeal is truly delicious, and great for the whole family. Even my toddler adored it, and that's saying something. So if you don't believe me, believe the three-year-old that throws what she doesn't like.
