GoVeggie!: Do That Grilled Cheese Lactose Free!

Thanks for Moms Meet, I got to take on a challenge: get creative with grilled cheese. The tricky bit? I'm not using cheese. Well, not your average cheese, at any rate. THIS cheese.

Yep. GoVeggie! Slices. Made from rice, coconut, soybeans and potatoes. Seriously. All of them are lactose and gluten free, and some versions are dairy, soy and GMO free. There's shreds and cream cheese available as well. Read about the healthy benefits HERE. What I have above are the lactose-free Pepper Jack, American, and Mozzarella. So what grilled cheese fabulousness did I come up with?

For the Pepper Jack, I pounded a chicken breast super thin and grilled it in some cajun seasoning, then did up the grilled cheese. Yummy, eh? It was.

Okay, this is JUST what I needed. I'm on the go a lot, and I love to use my Ipad to post pics, but it's a total disaster on there. I loaded PicJoy, and once it had done its thing, I was able to find my personal pics without having to go through a bazillion memes and backgrounds. I can even use context clues to search, like the weather or events, which really helps after a party or outing. It's especially beautiful that it connects to ICloud, which really expands my picture access and options. I can't wait until I can set up my Dropbox as well. You can even tag your photos, and those tags become searchable as well. This app is a total timesaver, and a lifesaver. Heartily and fully recommended.

Zing Zero Calorie Stevia Sweetener: Time For Tea With A Healthy Sweet!

I'm always looking for ways to eat healthier without sacrificing taste, particularly when it comes to my sweet tooth. So when I got a chance to enjoy and share Zing Zero Calorie Stevia Sweetener through Moms Meet, I was most glad to.

Iced tea party time!

I opted for some standard tea-party fare, like cucumber sandwiches.

Very simple: cut the bread into shapes with cookie cutters, spread each slice with a spread of cream cheese mixed with dill, and add sliced cucumber. I used the same cutter on the latter for better presentation.

Also, homemade cranberry scones, another classic.

Joy Williams' New Album, Venus: Ethereal Girl Power!

I was honored with the opportunity to preview Joy Williams' upcoming album. You might recall her as half of the folk-rock duo The Civil Wars. You should..they won four Grammys. Yes, indeedy.

Introducing...Venus.



This album is a "coming out" of sorts, a way to heal. Ms. Williams is releasing a musical account of her life over the last two-and-a-half years, the good and the bad, the pretty and the ugly, with no holds barred. And she does it beautifully.

She has a fabulously ethereal voice that both soothes and invigorates, and her songs maintain the folk-rock feel of her previous works, but with a sharp edge that's all her own. Some include a fun rhythm that evokes in the mind the urge to dance under the sunshine. "Woman (Oh Mama)" is a great example of this:



I enjoyed all of the songs, but my personal favorite was "The Dying Kind". For some reason, I had thoughts of a Celtic moor and a lost love, and I found myself returning to it over and over, each time sensing a different nuance, and  reaching a new level of enjoyment.

This is a wonderful album, and appealing to a wide range of musical tastes. I truly recommend you check it out. Whether it's the amazing message or the lovely music that you go for, you will not be disappointed.
